Abstract

KITCHEN FLOOD AT THE DRAGON PALACE HOTEL

The Chinese kitchen was flooded the night before the wedding function of Tan Sri Alex Young. The flood was caused by the residual accumulation of rancid oil and grease that had been thrown down through the kitchen sink by irresponsible kitchen staff. The rancid oil and grease had resulted in a blockage that was a very serious problem for the kitchen staff as it could not be cleared by using ordinary cleaning or by caustic chemical, without the approval of the hotel director. This was clearly stated in the clause pertaining to the standard operating procedures (SOP) for the kitchen. The mal practices of SOP by kitchen staff would definitely turn out to be a very costly issue for the hotel.
