Nicholas Tang had operated a string of family seafood restaurants called The Red Crab Restaurant for a number of years. By his seventh year in business, he had nine restaurants on the west coast. The restaurants had disappointed some of their guests because the menu in the restaurants was not standardized. This problem confused Nicholas Tang and he wondered whether he should expand his business any further.
